You may remember that this year our Halloween theme was a Swamp Soiree. So we thought these ‘moldy’ cheese balls would fit right in with the mossy, bug-infested scene. (Eewwwwwww!)

We created two variations – each pretty simple to execute. One with gorgonzola pear, thyme, and a little fried onion for crunch. The second recipe includes capers, feta and dill – we added some chopped smoked salmon to these as well, but you could serve the smoked salmon the side as well if you’ve got picky eaters in the house.

I’ll be honest – I’m the kind of cook who forgets to measure, and therefore this recipe isn’t going to be exact, but basically…
Feta + Capers Cheese Balls //
- 1 cup cream cheese
- 1 cup feta
- 1/4 cup capers
- 1/4 cup chopped smoked salmon (optional)
- 1 tsp chopped fresh dill to mix
- 1/3 cup chopped dill for ‘moss’

Gorgonzola + Pear Cheese Balls //
- 1 cup cream cheese
- 1 cup gorgonzola
- 1 pear – diced and sautéed in light butter until soft
- 1/4 cup fried onion bits
- 1 tsp chopped thyme to mix
- 1/3 cup chopped thyme for ‘moss’
The prep part is easy – just combine ingredients into the bowl, and gently shape them into balls. Then, place the balls in saran wrap (separately!) and leave in the fridge for at least 10-20 minutes. This will keep them from being a bit too sticky when you’re ready to top them with herbs…

When the balls have been chilled for a bit, take them out and roll them in the herbs! The pear got covered in thyme and the salmon covered in dill…

I liked the way the fresh dill worked for garnish too! And I can assure you that the second we shot this dish, it was gobbled up by all. I loved both flavors so much, and the salmon especially would be great for a brunch menu! I hope these mossy delights make it to your Halloween table!
