Our traditions run deep when it comes to Christmas morning – I’m sure yours do too. We usually start with presents under the tree, coffee, and panettone. Once the major gifts have been unwrapped, however, it’s time for brunch! And there’s no better brunch than a holiday day brunch, because you know it’s going to be boozy!

While I used to be one for spiking my hot chocolate or coffee, lately, I’ve been preferring a little bit lighter fare to start the day with, and that means mimosas!! And if ever there was a time for fancying your mimosas up, it’s Christmas morning.

love the addition of chocolate to this recipe! It’s really subtle but delicious. If you’re serving this for brunch, think of pairing it with chocolate croissants or chocolate brioche french toast – pomegranate and chocolate are a wonderful combination!

Start with a splash of the symple syrup, and then some fresh pomegranate seeds which you can muddle at the bottom of the glass. Add a few dashes of chocolate bitters, and top with champagne! Easy peasy.

If you’re serving this outside of brunch, feel free to add a little liquor too – vodka or whiskey would do nicely. Pro tip: I purchased this little sample set of bitters quite a while ago (there’s also this one) and I love experimenting with them! Rather than getting a large container of bitters, I’d recommend going for a few small ones to play with! (Also, an excellent stocking stuffer!)
