What’s more inspired than a summer cocktail? A cocktail inspired by one of my favorite summer destinations of course! It’s been three years now since my last escape to the Amalfi Coast, but I can still imagine myself sipping on something cool and refreshing, sitting high up on the cliffs overlooking the sea…

So, I pulled out a favorite indulgence one cannot go without during a stay in in Southern Italy – Limoncello – for a pretty twist on this classic digestif, and named it for the pretty blushing color that’s given by adding a splash of rose lemonade…

Ingredients // serves one

  • 1 oz limoncello
  • 1/2 oz. rose lemonade
  • 1/2 oz. lemon juice or fresh lemon
  • prosecco
  • tarragon cocktail spice
  • fresh thyme

I’m pretty obsessed with the cocktail ‘spices’ from a local Seattle company called Addition – they have selections like cinnamon, rosemary, different types of peppers and more, and are a great way to add a kick of flavor to drinks without having the actual spices on hand. For this recipe, I decided to go for the tarragon – but really you could also go with rosemary, thyme, or whatever your preference!

To make // Pour the Limoncello, rose lemonade, and fresh lemon juice into a cocktail shaker with ice. You can crush a little thyme in too, if you want a bold flavor. Shake and pour into a champagne coup. Add a few drops of tarragon (or your spice of choice), top with prosecco, and garnish with fresh thyme.

If you like things on the sweeter side, add more of the rose lemonade. For a bit more bite, go the reverse and do a bit more fresh lemon juice! The addition of the spices goes a long way – play with how many drops you use depending on how subtle (or not) you wan that flavor to be. Now close your eyes and picture yourself on the beaches of Sorrento…
