Summer is taking its sweet time leaving us this year, and I for one am not complaining about it! That and the fact that I leave for Jamaica tomorrow are putting me in the mood for this recipe…
A classic summer drink with a hint of fall flavor from the apricot gives this Dark & Stormy a delicious twist…
Apricot Dark & Stormy // serves 2
- 2 oz Aged Rum
- 2 oz Apricot Liqueur
- Ginger Beer
- 1 fresh lime or lime juice
- Candied ginger and dried apricots for garnish
Pour the rum, apricot liqueur and juice from a quarter of a lime into a cocktail shaker filled with ice. Shake and strain into glass. Top with ginger beer and garnish with candied ginger and dried apricot skewers! We also added a thin little slice of lime to float on top!
Tasting Notes: While most dark & stormy recipes call for spiced rum, we like aged rum here to compliment the apricot. You can add an extra squeeze of lime juice to top this drink off too if you prefer a bit more of that citrus flavor, but it tends to overpower the apricot, so play with your proportions!
My favorite part is how the skewers soak up the alcohol and make for a tasty treat at the end of the drink! Yum.
