The most important ingredient to any party, as far as I’m concerned is whipping up a signature cocktail. For our casual little rooftop gathering, I wanted something super refreshing for the summer, but with a kick.

My go-to drinks always involve grapefruit, so after doing some hunting, I discovered a concoction that piqued my interest… I’ll call it The Rooftop, as I do believe we’ll be drinking it quite a bit up there this summer!

The Rooftop // serves one

  • 1 1/2 oz Mezcal
  • 2-3 slices of Fennel
  • 2 oz. Grapefruit juice
  • Lime juice

To make, muddle the fennel with a splash of lime juice. Add the grapefruit juice and mezcal in the shaker. Strain and garnish with a fresh fennel frond. If you want to add a bit of sweetness, you can muddle some simple syrup or agave into the fennel and lime juice mixture. It all depends on a bit on the sweetness of your grapefruit juice. I like to get the all-natural stuff so it’s as little sugar as possible.

The smokiness of the Mezcal is key here – it adds a really unique flavor mixed with the fennel and grapefruit! Definitely one to sip… and thoroughly enjoy in the sunshine.

Sidenote – the best part of this recipe is making fennel + grapefruit salad with the leftovers! Yum!
